FLUFFY VEGAN BANANA PANCAKES

Fluffy Vegan Banana Pancakes      Prep Time: 5 mins  Cook Time: 2 mins  Level: Easy - Easy  Makes: Pancakes for 2      Ingredients:         ·      200 ml plain white flour (measure it in a measuring jug)  ·      300 ml of oat milk or dairy free milk (almond, soya, coconut)  ·      2 tbl spoons baking powder  ·      1 tbl spoon of Fairtrade organic sugar  ·      Pinch of salt  ·      2 tbl spoons of Coconut Oil  ·      1 fairly ripe Banana      Method      1.     Measure out all your ingredients.  2.     Preheat non-stick pan to a medium temperature  3.     In a large mixing bowl, combine oil the dry ingredients together along with the oil – mix well  4.     Next add the milk in a slow steady stream whilst whisking  5.     Whisk thoroughly until you have a smooth fairly thick texture (If there are little lumps in it don’t worry, it is just the coconut oil and will melt during the frying process.  6.     Ladle pancake mixture onto the pan and cook for around 1.5 minutes. You want the pancakes to be brown and bubbling.  7.     Whilst the pancakes are cooking add some of the sliced bananas into the pancakes and then flip.  8.     Cook for another 1.5 minutes or until golden brown.  9.     Remove from pan and stack’em up!  10.  Garnish with plenty of syrup and bananas.  11.  Enjoy the most delicious, fluffy pancakes!
